Vegetarian Black Bean Chili

Ingredients

  • 2 cups sweet onions, chopped
  • 2 tablespoons canola oil
  • 1/2 lb mushroom, sliced
  • 1 large green pepper, chopped
  • 1 large yellow pepper, chopped
  • 1 large red pepper, chopped
  • 3 garlic cloves, minced
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 dash hot pepper sauce

Directions

  • 1 In a large pot, saute onions in oil for 5 minutes.
  • 2 Add mushrooms, peppers, and garlic; saute 5-6 minutes, until vegetables are crisp-tender.
  • 3 Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer 20-25 minutes, until heated through.
