Vegan Spice Cake

Ingredients

  • 1 1/2 cups flour (I used unbleached flour)
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon clove
  • 1/2 cup raisins
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/3 cup oil
  • 1 cup ginger ale

Directions

  • 1 Combine flour, sugar, baking powder, salt and spices in a mixing bowl.
  • 2 Add vinegar, vanilla, oil, and ginger ale to the dry ingredients - stirring until just mixed.
  • 3 Fold in raisins.
  • 4 Pour batter into a greased and floured 8x8 cake pan.
  • 5 Bake at 350F for 30-40 minutes or until cake tester comes out clean.
