Tuscan Bean and Onion Salad

Ingredients

  • 1 cup thinly sliced red onion
  • 1 (15 ounce) can cannellini or 1 (15 ounce) can borlotti beans, drained, rinsed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground pepper

Directions

  • 1 Place onion in medium bowl; cover with ice water. Let stand 20 minutes.
  • 2 Just before serving, place beans in a large bowl. Drain onions; add to large bowl.
  • 3 In small bowl, whisk together oil, vinegar, salt and pepper.
  • 4 Add to large bowl; toss.
