Shortbread Meltaways

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup icing sugar
  • 2 teaspoons vanilla
  • 1 3/4 cups all-purpose flour
  • 1/2 cup cornstarch
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup skor toffee pieces

Directions

  • 1 Preheat oven to 350 degrees F.
  • 2 Line cookie sheets with parchment paper.
  • 3 Beat butter, icing sugar and vanilla until creamy.
  • 4 In a separate bowl, combine flour, corn starch, baking powder and salt;stir half into butter mixture.
  • 5 Stir in toffee bits and remaining flour mixture.
  • 6 Roll heaping tablespoons of dough into balls and place on prepared cookie sheets about 2 inches apart.
  • 7 Bake in preheated oven for about 15 minutes or until lightly golden.
  • 8 Let cool on pan for about 5 minutes and dust with more icing sugar, if desired.
