Pan-Fried Potatoes With Paprika and Lemon

Ingredients

  • 3 tablespoons olive oil
  • 2 1/4 lbs russet potatoes, unpeeled, 1 1/2-inch pieces
  • 1 medium onion, chopped
  • 1 teaspoon Hungarian paprika
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Italian parsley, chopped

Directions

  • 1 Heat oil in heavy large pot over high heat.
  • 2 Add potatoes and saute until beginning to brown, about 12 minutes.
  • 3 Reduce heat to medium.
  • 4 Add onion; saute until onion is just tender, about 4 minutes.
  • 5 Mix in paprika.
  • 6 Cook until potatoes are tender, stirring occasionally, about 5 minutes.
  • 7 Sprinkle potato mixture with lemon juice and parsley.
  • 8 Season with salt and pepper.
