Navy Bean Pie (Muslim)

Ingredients

  • 1 unbaked 9-inch pie shell
  • 2 eggs, lightly beaten
  • 1 cup evaporated milk
  • 2 cups cooked and mashed navy beans
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon clove
  • whipped cream (optional)

Directions

  • 1 Preheat oven to 425 degrees.
  • 2 Combine eggs and evaporated milk in a bowl.
  • 3 Add beans, sugar and all spices.
  • 4 Beat at low speed of a mixer until well blended.
  • 5 Pour into unbaked pie shell.
  • 6 Bake at 425 degrees for 15 minutes.
  • 7 Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean.
  • 8 Serve warm with whipped cream or you can even enjoy it cold. :-).
