Green Beans With White Wine and Garlic Vinaigrette

Ingredients

  • 3 cups fresh green beans, trimmed
  • 2 tablespoons shallots, finely minced
  • 2 garlic cloves, minced
  • 1/4 cup white wine vinegar
  • 2 teaspoons olive oil
  • 1 tablespoon lemon juice
  • fresh ground pepper
  • 1 dash salt (optional)

Directions

  • 1 Blanch the green beans in boiling water for 2 minutes and drain.
  • 2 Plunge them into cold water and drain again.
  • 3 Whisk together the remaining ingredients and add to the green beans.
  • 4 Toss and serve.
  • 5 6 1/2-cup servings.
