Garlic Skillet Red Potatoes

Ingredients

  • 3 tablespoons olive oil
  • 1 1/2 lbs small red potatoes, quartered
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped

Directions

  • 1 In a large skillet, heat oil over medium-high heat.
  • 2 Stir in potatoes.
  • 3 Cover skillet; cook, stirring, until potatoes are almost tender, about 12-15 minutes.
  • 4 Uncover, reduce heat to low.
  • 5 Stir in garlic, salt and pepper.
  • 6 Cook, stirring, until potatoes are tender, about 2 minutes.
  • 7 Sprinkle parsley and add salt to taste if desired.
