Delicious Chicken Satay (Grilled or Broiled)

Ingredients

  • 3 1/2 lbs boneless chicken breasts (cut into long thin strips or cubes)
  • salt
  • 1/4 cup soy sauce
  • 1/4 cup fresh orange juice
  • 3 tablespoons vegetable oil
  • 1/2-2 teaspoon red pepper flakes
  • 1 -2 tablespoon minced fresh garlic (or to taste)
  • 1/4 cup smooth peanut butter
  • 2 tablespoons minced onions
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon ginger powder
  • 1/4 cup fresh cilantro
  • 1 pinch black pepper

Directions

  • 1 In a bowl combine all ingredients together (except the chicken and salt) mix until well combined.
  • 2 Place the chicken in a shallow glass dish and pour the marinade over the chicken; toss to coat.
  • 3 Cover and refrigerate for 24 hours (turning occasionally).
  • 4 Prepare the grill.
  • 5 Thread the chicken onto wooden pre-soaked skewers.
  • 6 Sprinkle lightly with salt.
  • 7 Grill (or broil) the skewers for about 5-7 minutes or until done.
  • 8 Serve hot.
  • 9 Delicious.
