Couscous With Corn

Ingredients

  • 1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
  • 1 shallot, minced
  • 1 cup chicken broth or 1 cup vegetable broth
  • 3/4 cup couscous
  • 1/3 cup fresh corn or 1/3 cup thawed frozen corn
  • 1/4 teaspoon pepper
  • 1 pinch cayenne (optional)
  • 1/8 teaspoon salt

Directions

  • 1 Melt butter in saucepan.
  • 2 Add shallot and saute 1 to 2 minutes, or until tender.
  • 3 Add chicken broth and bring to a boil.
  • 4 Add couscous, corn, pepper, cayenne and salt.
  • 5 Cover; remove from heat and set aside 5 minutes.
  • 6 Fluff with a fork.
