Butterscotch Cake With Marshmallows

Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 1/2 cups brown sugar
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/4 cup milk
  • 12 marshmallows

Directions

  • 1 Sift the flour.
  • 2 Measure and sift again with the baking powder and salt.
  • 3 Mix the shortening, sugar, and water and cook over low heat until the sugar is dissolved.
  • 4 Cool and add vanilla.
  • 5 Add eggs one at a time, beating well after each addition.
  • 6 Alternately add dry ingredients with the milk.
  • 7 Beat until smooth, being careful not to overheat.
  • 8 Pour into 9 inch cake pan lined with paper.
  • 9 Place marshmallows at intervals on top of the batter.
  • 10 Bake at 350* for 50 minutes.
