Beefed-Up Black Bean Soup

Ingredients

  • 1 lb lean ground beef
  • 1 (11 ounce) can black bean soup
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 1/3 cups water
  • 1 cup salsa
  • 1/4 cup green onion, thinly sliced
  • sour cream (to garnish)

Directions

  • 1 Cook beef in 3 quart saucepan until no longer pink.
  • 2 Drain.
  • 3 Stir in soup, beans, water and salsa.
  • 4 Bring to a boil.
  • 5 Reduce heat to low and simmer, uncovered, for 15 minutes.
  • 6 Remove from heat and stir in green onions.
  • 7 Garnish with sour cream.
