Oven Baked Fries/Potato Skins

Ingredients

  • 4 large baking potatoes
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1 cup grated cheddar cheese
  • 1/2 cup black olives, chopped
  • 1/2 cup green onion, chopped
  • 1/2 cup crumbled cooked bacon
  • 1/2 cup green pepper, chopped
  • 1 cup salsa
  • 1 cup sour cream

Directions

  • 1 leaving potato skin on, wash and scrub thoroughly.
  • 2 cut each potato into 8-9 wedges.
  • 3 melt margarine.
  • 4 using a basting brush, put a thin coat of margarine on a cookie sheet (to avoid sticking).
  • 5 place wedges on cookie sheet.
  • 6 baste with some of the margarine.
  • 7 baste a few times while cooking.
  • 8 bake at 400f for approximately 40 minutes till golden brown and crisp on the outside.
  • 9 remove pan from oven.
  • 10 evenly spread cheddar cheese over potatoes.
  • 11 sprinkle green peppers over cheese.
  • 12 place back in oven until cheese is melted, about 5 minutes.
  • 13 remove from oven and place on platter.
  • 14 top with olives, onions, and bacon.
  • 15 serve with salsa and sour cream.
