Herbed Tomatoes

Ingredients

  • 28 ounces whole tomatoes, drained
  • 1 1/4 cups chicken and herb seasoned stuffing mix, divided
  • 1 small onion, chopped
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 1 tablespoon butter

Directions

  • 1 Preheat the oven to 375 degrees.
  • 2 Cut the tomatoes in quarters; reserve the juice that accumulates when you cut them.
  • 3 In a large bowl, combine the tomatoes, accumulated juice, 1 c stuffing mix, onion, sugar, salt, oregano and rosemary.
  • 4 Mix well and pour in a greased 1 quart casserole.
  • 5 Sprinkle the remaining 1/4 stuffing mix on top of the tomatoes and dot with butter.
  • 6 Bake at 375 for 45 minutes.
