Christmas Tin Popcorn Snack

Ingredients

  • 2 cups salted butter
  • 2 1/2 cups white sugar
  • 1 cup white corn syrup
  • 1 teaspoon vanilla
  • 1 1/4 cups unpopped popcorn
  • 3 cups whole almonds

Directions

  • 1 You will need a large roaster, sprayed with Pam.
  • 2 Pop the corn, transfer into roaster with your hands, shaking out the unpopped kernels.
  • 3 Stir in the nuts.
  • 4 Place the butter in a large heavy pot over medium high heat.
  • 5 When it is almost melted, add the sugar and syrup.
  • 6 Stir constantly to dissolve the sugar, then often to avoid scorching.
  • 7 When it reaches a boil, set timer for 5 minutes.
  • 8 When it has finished boiling, stir in the vanilla.
  • 9 Pour over the popcorn/nut mixture in the roast pan.
  • 10 Mix well, then stir about every 10 minutes til cool.
  • 11 Optional: You can substiture mixed nuts or walnuts if you desire.
  • 12 Makes a nice hostess gift.
